Side item?

Does anyone have a good idea for a side? We are doing chicken and fish. My mother doesn’t want to do mashed potatoes or fingerling potatoes. I do Not want a baked potato. And my catering director is worried the risotto will be dry. Any ideas ladies?

    What does your caterer have available? If you're looking at potatoes, you could always do mashed. Or if you want a non-potato starch, you could do something like wild rice or quinoa. Or just do vegetables of some kind. There are a lot of choices, but I don't know what appeals to you, or what's in your budget.

    Yeah my mom thinks mashed wouldn’t be good. And I’m worried about a dry rice. Wanted to do something different but delicious

    Is rice pilaf better than risotto? You could also do stir-fry veggies, green beans or sweet glazed baby carrots.

    We are doing sauteed green beans, white mac n cheese and baby potatoes (I know you dont want potatoes... I always have to say all 3 together lol).

    Not sure why mashed potatoes wouldn't be good. We had them for our wedding and they were amazing. We also had pasta which was really good and veggies. I've had mac and cheese at a wedding and it was delicious.

    We did garlic mashed potatoes & maple syrup brussel sprouts for our sides, then a salad for the first course. Everyone loved both, there wasn't any left at the end of the night.
