Self catering!

Brooke, on October 2, 2019 at 3:11 PM Posted in Do It Yourself 0 10
Hey ladies, I have decided that I will self cater my ceremony. We have roughly 150 guests. I want to do pulled pork sandwiches, salad, home made root beer, lemon aid, fresh flavored water, then for the reception do a dessert for 275 guests. I’ve been thinking long and hard I would do a s’mores bar. But the venue I’ve been looking at will not allow a open flame. So I have decided s’more cupcakes.
My question is ladies, what type of side dishes will go with pulled pork sandwiches? And salads? I’m thinking a berry salad. With a berry vinaigrette. Of coarse there will be some fruits, and cheese.
thanks for all your help.

Cole slaw goes really good with pulled pork. Or potato salad, macaroni and cheese.

Cole slaw, fried okra, mashed potatoes, macaroni, macaroni salad, potato salad.

How will you store the food at a food safe temperature, and keep it at a food safe temperature transporting to the wedding? Who will set it all up & clean it all up? Refill serving platters? How will you deal with guests with food allergies? Do you have a kitchen big enough & free from pet dander, dust, smoke, etc. to be able to accommodate all the cooking? I've been to 1 wedding that self catered, it was a disaster.

All of this. Self-catering sounds like a great idea until you spend a week prepping and cooking only to end up with unsafe food, guests having to "pitch in" to set up and serve, and cleaning it all up. These do not usually go well, especially not for the size group you are describing.

I think mashed potatoes, potato salad, macaroni, green beans, and rolls would go with pulled pork sandwiches. But I agree with all the previous posters. Also I’m a little confused because normally you don’t eat a meal during the ceremony, the reception is where the meal is.

I am planning on reaching out to the church. They will help prepare, store, set up, clean up, and dish out the food. The venue I’ve been keeping my eye out has a kitchen. To store all the food.
I will rent out proper heating and cooling tools.

Fried okra, baked beans, and mashed potatoes go well with pulled-pork sandwiches!

We're self catering our backyard BBQ reception as well. Doing pulled pork with a variety of different bbq sauces, a salad "bar", Mac n cheese, triple berry cheesecake salad, killer beans, corn bread and either mini corn on the cob or another veggie. And a popcorn bar for cocktail hour. As long as you are smart you'll be fine. Don't let people discourage your plans.

Even though I don't think self catering is a good idea, I'd suggest having a second main course option other than pork. Lots of people don't eat pork.

If you belong to a warehouse place you can get a half sheet cake fairly cheap. Costco’s is about $20 and it’s 2 layers. For salad cole slaw, macaroni, fruit salad, baked beans are options. Seems like lots of people to feed. I would also have a different meat selection even if it’s cold cuts.

I think that potato salad, coleslaw, macaroni salad, baked beans, mac n cheese, green beans, or cornbread all really sound good with pulled pork. I might would add some smoked chicken if you could in case someone didn't eat pork.
