Seafood Buffet

For those of you who have had lobster or crab in their buffet at their wedding, how does it taste after being kept warm?

    Never had in in a wedding before, but a party. It was okay as long as it’s not submerged in the sauce/broth. The ones that was submerged in the broth was wayyyy too salty and overcooked. If there is no broth, I think it would be okay.

    Also never had it at a wedding & don’t plan on serving it. Have some members on both sides of our family that are extremely allergic to any type of seafood. Also, keeping it warm without overcooking it is a lot of work.

    Mmmmmmm love lobster or crab at a wedding! But in my experience it’s been something cooked and served immediately

    Yeah it usually it is. Just trying to find a way that after cooking what will be the best way to keep it warm and still taste good.

    I would suggest keeping it out of your wedding since a seafood allergy is very common and a fairly severe one.

    Agreed. If I attended a wedding with seafood at a buffet and a guest accidentally placed the seafood tongs in a non-seafood dish that I then ate from, I'd likely end up in anaphylactic shock. As would the millions of others with seafood allergies. Seafood can definitely be safely done with a plated meal, but best to avoid in buffets for safety concerns.

    I'm not a fan of a either but my daughter goes nuts over crab in any form. She said most buffets/brunches she has attended, they are generally served chilled after they are cooked, very rarely are they a hot dish but that they taste great. Also they are on their own table separate from the rest. Ask your caterer how they are served. I would imagine they're kept warm the same as any other buffet chafing dish..
