Sage vs. Lime vs. Mint

This is mint. I like both of those, but actually kind of like the lime better. I'm not sure if either of those shades match the shades you posted though. The sage I looked up was nowhere near what you posted (and was actually my favorite on pinterest) have you thought of using a richer color since it will be in November?

I'd say look at swatches and not just online. My MOH was in mint and it was a softer color than what it looks like online. It also depends on the shade of brown you are using.

I love the mint, but it might not be green enough for your FH if he really wanted green. The sage is also very pretty, and it's more green. I don't think that's actually sage, but it doesn't really matter what they call it. It's still pretty!

I'm doing a chocolate brown like this

ETA: It is a fall wedding but I'm doing burlap and lace, I chose a darker color burlap because I wasn't a fan of the lighter colored burlap, and I'm doing an ivory lace. Yes it is a fall wedding, but I don't like the darker greens with the brown and FH hasn't decided what color tuxes he wants yet.
