Resort changed the menu rules after guests Rsvp'd with choices

So, my destination wedding coordinators originally told me that we would choose the appetizers and all of the courses but guests can choose between 3 entrees which I give them in advance. I had everyone rsvp with their choices and it's nearly an even split between beef, chicken, and fish. Now that we are 2 months out and need to finalize details, they are telling me that we need to choose 1 first everyone and they will accommodate dietary restrictions. I wouldnt be upset if they hadn't told me that they had the option in the beginning. Now, what do I do? Call the guests and get a consensus? It's only 22 people including us but still is embarrassing. I asked the resort to accommodate me anyway even if I have to pay a fee. If they refuse, how should I handle it? I want people to enjoy their dinner and it seems tacky to say "just kidding, you have to have beef" or whatever. So frustrating.

    This isn't your fault, so don't feel bad letting your guests know! If the resort doesn't let you offer all the original choices, be honest with your guests and they'll be okay. It's much better to let them know now, rather than at the actual reception and be told then!

    Your guests will understand. However, I would argue this with your resort if you have anything from the resort in writing (emails, contract, etc.) stating this is what you were getting. At the end of the day, it is just food but to me, I’m tired of resorts saying one thing and then changing their tune. It’s so frustrating!

    Yes, I just emailed them today and reminded them that it was explained that way (I have an email) and that I already gave the guests the option. They will accommodate dietary restrictions. I asked that they honor it to save me the embarrassment and so that my guests are happy. I told her I was open to paying a fee. There doesnt seem to be a language barrier but I've had some frustrating exchanges where I had trouble getting a clear answer. I even commented that it was great that guests can choose. I'm going to push for it and see where it goes.

    Great news- Resort said the would make an exception as long as I provide the food selection with guest name ahead of time. Now, I have to see if the available DJ they provide is comfortable making a few announcements. Otherwise I have to hire an emcee or have a guest do it. What DJ is not "comfortable" talking on a mic (especially for 300/hour). The wedding packages are great but they can kill you on the extras. I'll work it out. Thanks
