Prescooping icecream and keeping it cold?

Martha Stewart has a video on her website about prescooping ice cream and freezing the individual scoops ahead of time. This way, the individual servings are ready to go and you don't have to spend time at your party scooping things out.

I thought it would be fun to have a DIY icecream station with prescooped icecream and toppings to choose from but logisically I didn't think it would work. Has anyone done this before? I'm concerned that the icecream would melt quickly and create a big soupy mess.

If you've served icecream to people at a big party before, how did you handle the details? (Did you use dry ice to transport it/keep it cold?)...

    We served cold stone creamery ice cream for my graduation party instead of the same food everyone else was going to be serving. We prescooped all the icecream the night before and put it in the deep freezer. Then we took large coolers and placed the ice cream in coolers labeled for which flavor they were. We put them in styro foam containers with lids so they stacked well in the coolers. Although, plain coolers might look a little tacky, but I am sure you could come up with some way to decorate the coolers or something.

    Dry ice can keep the temp down lower than ice also. If you layer dry ice in stryofoam cooler then layer a barrier between it and the ice cream holder (so no one gets burns) you might be able to have a server at the station handling just the ice cream. On the outside cover with wedding color or fabric. Table runners or chair sashes might work for this.
