What is the proper or best way to invite someone to your wedding and tell them they can not bring a guest? Do i tell them before sending out invitations or is there some way to word the invitation so they will know?

You would only address the invitation to them. If you have an RSVP card you can put we have reserved 1 seat in your honor or put ___ of 1 attending.

To anyone that was single, we addressed the invite to just them (and the save the date). Then the RSVP said "___ out of ____ attending" and we filled out the second line with a "1".

I usually just address it to them. If I want someone to have a plus one I usually say so. But some people have this thing where they think just because it isn't explicitly said that they can't not bring a plus one must mean they can -_- so I would also do what PP said where you say we have reserved __ seats for you.

You address it only to them by name and put "We have reserved 1 seat in your honor" on the rsvp card. No need for individual extra correspondence. I put a FAQ about plus one's on my wedding website.

Traditionally, an invitation addressed to only 1 person means no plus one. If you are inviting someone with a plus one you would either put the name of the plus one (if you know who it would be) or would say "Mr/Ms ____ and guest" which would mean they could bring any person they like
