Paying Vendors for Destination Wedding in Italy

Hello,

For those of you who have or will be having a destination wedding, how did you deal with paying your vendors in cash on your wedding day?

We've placed about 30% down for each vendor, but if we want to pay more in advance, we will have to be invoiced which would add on an extra 10%. I'm trying to figure out if it's better to exchange our money in the US before we head over there just to be done with it (knowing full well that we will get a lower exchange rate) or if we should ask our banks to increase our ATM withdrawal limits (and have to deal with potential fees) or if we should carry physical USDs and exchange while we're over there (better exchange rate but having to carry that much cash makes me nervous). We're aware that we'll have to declare any amount larger than $10K, but since it's for our wedding, that would be understandable. Any advice would be greatly appreciated!

So, we're getting married in Greece and for every vendor thus far, I've had to send down payments via Western Union. If we didn't pay upfront, we'd obviously lose our booking with that vendor. So we couldn't wait until we went to Greece to pay everything.
Before leaving, we're probably going to withdraw half of what we need in cash, and then use our debit cards for the other half. I don't feel comfortable carrying enormous amounts of cash on me, especially on international trips. That'll hopefully reduce the fees, but no matter what, there's no easy way to get around it.
