I feel stupid for asking this but...

Our last name will be Bajpai
And I'm ordering a sign for our wedding day but I don't know whether to spell it as The Bajpais or The Bajpai's

No apostrophe. Apostrophes denote possession or contraction and while people like to use them willy nilly, it’s grammatically incorrect. The Bajpais is the correct form.

The Bajpai's means that there is one person named The Bajpai and s/he owns something. The Bajpais means there are multiple people with the name Bajpai.
