Opinions wanted: brunch wedding menu (buffet)

So we've started working with a caterer on our brunch wedding menu. FH and I didn't have a specific vision of what it would look like, but threw out some ideas and she gave us this preliminary menu, to see if we're "on the right track". We wanted to include some options that work for people who don't love breakfast food as well. I'm posting from mobile so I put the menu in the comments. ETA: I'm having an 11 am wedding and the meal probably won't be served until 12:30- 1pm, would that be weird for brunch foods??

    @Smox chicken and biscuits is a fantastic idea, they'll hold so much better than waffles.

    I also probably wouldn't do shrimp and grits as an entire meal option on it's own, so I see why it wasn't a hit at your wedding, but at a buffet where you can have a bit of everything I think it'll go much better.

    I think it sounds good! I personally like regional foods, so if I was attending from out of town, I would be thrilled with grits! I like that it is not all the super traditional breakfast buffet items.

    Katy, I actually think that is prime brunch time.

    Most importantly, drinks: mimosas, bellinis, bloody Marys!!

    really, the possibilities are endless, but I think some sort of eggs (omelet station), some breakfast meats, something sweet (waffles or pancakes), some salads, breakfast potatoes of some kind, and pastries (croissants, baguettes, muffins) would be my ideal brunch buffet. Maybe you could do some sort of pasta for people who don't like breakfast foods (do such people exist?).

    Ive never had grits (and will probably die never having eaten them), but I've known quite a few transplanted southerners who consider them to be the utmost comfort food. Sure, if it's part of your culture, why not serve them? There are tons of threads authored by brides who are doing ethnic or cultural catering, so feel free to express part of your culture through some of your food selections. As long as you have variety, you're fine.

    As for your time table...ehhh, I consider 1 PM lunch time. You could get away with brunch if you were closer to 11:30, but I really think you're past the brunch hour with this time line. That's not to say you can't offer your brunch selections, but I would add more lunch type foods to the menu -- maybe a delicious soup, bruschetta, a pasta dish with an alfredo sauce, an amazing salad, or small sandwiches on a variety of breads.

    When I've been to lunchtime brunch buffets, at the resort where my family used to vacation; half of the food was breakfast food and half was lunch food, so guests had the option of either.

    Sorry, but I'm not a fan of the usual breakfast food.

    P.S 11% of our guests chose the vegetarian entrée.

    Sounds great but I would also add sliced ham and possibly beef tenderloin with a side of horseradish sauce... But then again, I'm Italian and the more food the better...

    Eh, I'm not a fan. For a brunch buffet (and I LOVE the idea of a brunch buffet for that time of day), I'd expect an omelet station, steak and eggs, potato bar, French Toast, waffles, pancakes, muffins, cheese and fruit platters, pasta salad, some lean protein, like grilled chicken for people to make their own salad, some deli items like gourmet sandwiche bites, etc.

    For drinks, bloody marys and mimosas, along with your regular juices, tea, coffee, and soft drinks.

    I just worked a brunch wedding this morning. Bacon bar, build your own mimosas, waffles, omelet station, potato hash, salad,cinnamon rolls plus cake and coffee. All the guest liked it and it was perfect for a morning wedding.

    Strata is okay but lose the mushrooms unless you're doing an omelette station. Spinach ham or bacon instead of shrooms. I'd pick one of your regional dishes and substitute with more traditional fare, but that's a know your crowd thing. Definitely need a breakfast potato dish

    Menu revisions I'm going to talk to her about:

    Passed hors' d oeuvres 

    Sausage bites

    Mini cinnamon rolls/ mini muffins

    Mini quiches-spinach/cheese and ham/cheese

    Brunch

    Shrimp and grits-grits with a variety of toppings-shrimp, bacon bits, mushrooms, green onions, feta cheese, cheddar cheese 

    Chicken and biscuits

    Hash brown dish (probably with cheese and some veggies)

    Fresh fruit salad with mint

    Assorted roasted veggie platter

    Going to ask about adding:

    Another dish with sausage/ham

    A side to go with chicken that is more lunch food- mac& cheese or pasta salad.

    Also, a PP mentioned it and it's important lol, to ask about having both fried and grilled chicken available. ETA: we're doing mimosas and a beer and wine bar.

    The menu is great. People will eat shrimp and grits. I would add breakfast pastries, fruit and salad
