Not sure what to do

Our venue has a food and beverage minimum of $7,000.00 my fiance and I thought we would easily make that since we invited 141 people. However, we have received a ton of declines and are about $800 under the minimum. Our venue is recommending that we add more alcohol or hors d'oeuvres. I believe it...
Our venue has a food and beverage minimum of $7,000.00 my fiance and I thought we would easily make that since we invited 141 people. However, we have received a ton of declines and are about $800 under the minimum. Our venue is recommending that we add more alcohol or hors d'oeuvres. I believe it would cost about $10 per person to add extra of either one which would take us over our minimum, but I don't want to spend extra money just to meet a minimum amount. My family suggested inviting other people we might have cut from our guest list originally, but I think that would be hurtful to do plus the deadline for booking a room is tomorrow. Any body have any suggestions?

    I did the math and we would have to add about 4 apps to reach the minimum and we already have 3 apps and 7 apps sounds like way too much in my opinion.

    I don't believe they have a late night snack option. Plus we are going to a bar afterwards and everyone has been invited to go.

    After giving it some thought, it might not be the best idea after all. We are having cake and a candy bar so I think we might have enough desserts already.

    You have to spend the money no matter what. You can talk to your venue about non-food options. But I'm very much of the belief that if you have to spend it spend it on something that will at least add a bit. With a candy bar and cake a lot of times you can take leftovers home.

    If you need more ideas you could ask about upgraded decor, coordination services, and upgrade meal (ex. From roast beef to prime rib). Good luck. I wouldn't worry too much at this point about having too much of something

    Unfortunately the minimum only applies to food and beverages so we can't upgrade other stuff. We have also already picked top of the line food to serve so adding additional food or beverage is hour only option. Right now we are just trying to figure out what the best option would be that would allow us not to spend a ton of extra money but meets the minimum requirement.

    We don’t have a catering minimum to meet at our venue but we did end up coming in wildly under budget for our catering (can I get a hallelujah for kids eating free and a smaller guest list 😂) so we decided to add a late night snack. We will still be way under budget, but now we get to drunkenly eat pizza at 10pm and I think people will be really excited about it

    I don't think 7 appetizer choices is too many actually. I like having more options because I'm a bit of a picky eater and have some food allergies, so in a group of 3 options, I may only be able to eat 1. Since you have to spend it on food or beverages, I say go for the apps given your concern of too many desserts and not too many drinkers.

    I am not sure our venue offers a late night snack option.our wedding also only goes until ten and then we have an after party across the street at the bar.

    Another reason I hesitate to add more apps is that our venue has very usual apps and we had a hard time picking three we thought people might like since a lot of our guests like simple food.
