If you make them your signature drinks at the bar will you still have the bar open during cocktail hour?

I was considering doing a bubbly bar at cocktail hour myself!

To make sure I understand- I think you mean offering a mimosa as your signature drink from the bar or having a more DIY mimosa bar where guests make them themselves?
If so: I think having then as your signature drink might be significantly easier. For one, how many guests do you have? Now imagine them all trying to make mimosas at once around one tiny station. Some people are taking really long and others just want them to hurry up and finish so they can get a drink. So, already, you need multiple stations/enough room to spread out the ingredients. As long as this isn't all you're serving it should be fine but still something to think about. As opposed to the bar tender doing it and it moving very quickly. However, this limits your options. I'd suggest sticking to 1 - 3 flavor options if doing it as a signature at the bar (like "original, peach, or raspberry" or whatever with no extra frills or garnishes) because otherwise it gets very complicated and time consuming for the bartender.
    Hope this helps!

Diy bars are cute but get messy quickly. Mimosas are simple and could be done in batches. (We had mimosas ready as guests arrived to our brunch late morning wedding).
Signature drinks are a quick win and generally are a great way to add your spin in a less messy way. We also had a few signature drinks and they made a bunch of additional specials.

If you aren't doing open bar until the reception then I vote you do the mimosa bar during cocktail hour. I think that's super cute, my bridal shower was sunday and we had a mimosa bar let me tell you people Loved it! As a wedding guest I would love a mimosa during any part though lol
