Menu Variety - Thoughts?

So we met with our caterer and loved the food. We are having a semi-formal wedding and want an untraditional menu (because of preference, not cost). We decided on tacos and sliders!

I know some might think our menu isn't formal enough, but what I'm concerned with is variety. Do we have enough variety? Add another side? Our caterer thinks we have plenty, but I'm unsure. We also said he would work with any vegetarians ( We have 3, no vegans). Any feedback is welcomed!

Appetizers:
(Passed)
-Stuffed mushrooms (vegetarian)
- Beef and pork meatballs
- Cilantro lime shrimp
- Butternut squash and goat cheese wontons
(Stationed)
-Cheese, fruit, and crackers

Dinner- Buffet
(Taco, nacho, "bowl", make your own whatever)
- tortilla salad (so delicious)
- flour and corn tortillas
- tortilla chips
-guac
- shredded cheese
-three salsas
-cilantro lime chicken (shredded)
- chimichurri steak (strips)
- southwestern rice pilaf
(Sliders)
- Turkey bruschetta slider
- Another slider of our choice

Dessert:
- 3 flavor choices of gourmet cupcakes made by a popular local bakery

Lake night snacks:
- various topped pizzas
- cannolis!

    I would add beans as another side. These could go with both the tacos and the sliders and be something more your vegetarians could eat. Also, if it is in your budget, I would add a potato of some sort to go with the sliders - mashed potatoes or a baked potato bar (could use same ingredients as taco bar especially if you add sour cream to your list) and this would be another item your vegetarians could eat.

    Was also going to say beans and/or potatoes.
    I'm also doing tacos, but also pasta. I figured that covered all my picky eaters, diets, and allergies.
