Menu choices... after invitations go out? FML.

Our venue only does tastings four months out (which we were aware of), only on Wednesdays and Thursdays (which we did not know), and need a 14 day lead time in advance.

This would have been fine, except that FH did not live here during the week for the last two months, and didn't have his school rotation schedule for this month until last week. So, the earliest we can do a tasting is the 24th, which is after invitations need to go out. We need one fish option, as we have a few guests who do not eat proteins besides fish, and can add a second option (chicken or steak). There do not appear to be any vegetarians or vegans on our list, but we're hoping any surprises that pop up will be happy with salad, dinner rolls, mashed potatoes/rice and steamed veggies.

Here are our options. What do you suggest/think is better etiquette?

A) order RSVP cards with super vague options (ex: fish and meat)

B) order cards with no choice and follow up later

C) serve everyone fish

    DO NOT serve everyone fish. What I would do, just to be safe, is have them chose between fish or chicken.

    How far after invitations? Like a few days? If so just put the options on your wedding website. The one on here allows for you to put menu options and people can make their selections when they RSVP. You'll get an email of who wants what.

    Also, I'm assuming you already know you do not usually need to do an RSVP Menu option if you are doing a buffet style...

    I'd say go with vague options.

    Are you talking March or April 24th? If it's March 24th you have another option: do an online RSVP, and ask the meal choice online along with it. You can order your invitations saying to RSVP online ahead of time, after your tasting just add the choices to the online system, and send out the invites that day. 2 months is plenty of time for invites

    I'd just stick with what pleases the most people and go ahead and assume you'll be serving fish and chicken.

    This will be a plated meal.

    We're going to send out invites as soon as we receive RSVP cards, which I'm ordering from WPD today or tomorrow. We'll have menu selection a few days after.

    We are doing online RSVPs, but are still sending out cards as well for older guests, who will not want to RSVP online.

    Go vague. There are some RSVP cards that just have silhouettes of a cow, a chicken, a fish, and a carrot. If anyone really cares, they can call you to ask.

    My advice is to talk to the venue wedding coordinator. My guests will choose their 3 courses on the day of the event. The venue is printing up a little menu for them with 2 options for each course. Guests will not have to RSVP their selections. If the venue wedding coordinator says they need to know what your guests want to eat ahead of time, than I would just put chicken or fish on the RSVP.

    These are our options. We have to have all meal choices in two weeks out. Two beef, two chicken (marsala is probably out because it has veal stock in it, and we have some chicken eaters who don't eat red meat), one pork, and some assorted pastas we're not really too hot on.

    ETA: two menu choices is our limit. I'm not paying an extra $1000 for three.

    I would be pissed if I was a guest and found out on the day that the only available entree was fish. I don't eat fish. I would go with A and be vague. Most of the time people don't remember the exact choices they had. I would just want to know if I am going to be able to eat. Also, hoping any vegetarians are okay with salad, potatoes etc is not okay. They are expecting a meal. At my sister's wedding they only had a pork and stuffed mushroom option. I hate both and ate the nasty kale out of the mushroom and the measly salad they provided. I was pissed that there were not good food options. I will probably continue to complain about this for the rest of my life because I was pissed. You should provide an option. Maybe check with your caterer about just a few vegetarian options for those that are vegetarian. It is probably only a few people, if any.

    I have actually tasted the food; the venue owns the restaurant next door, and FH and I have eaten there on several occasions. Nothing that will win awards, but tasty and filling. We can see if the restaurant has any dishes very close to the ones on the tasting menu, and maybe go to dinner there this weekend.

    Will definitely not be serving only fish. Option C is dead to me.

    We are virtually positive we have no vegetarians, but will speak with the venue coordinator later this week about options.

    ETA: The restaurant has both steak dishes on their menu. Guess I know what we're doing for dinner this weekend.

    Id do prime rib, chicken picata and shrimp scampi. Those are good even at a non award winning restaurant.

    If you are doing one chicken/ one fish, I would do the mahi mahi and the chicken alfredo.

    I would see about going to the restaurant this weekend. Do they serve any of the chicken dishes? For your guests that don't eat red meat, do they eat fish? If they only will eat chicken, then I'd go with chicken and fish. If they will eat fish then I would do steak and fish.

    We did A and just put beef/chicken/fish/veggie. FH and I are on the fence about which beef and chicken choice we wanted. I was able to get a really good price on invites not long ago and went ahead and bought them, even though our menu is not concrete.

    Thanks for the input! Option A it is.

    I talked it over with my my mom and FH and his mom, and I think we're going to do beef and fish. My mom vetoed pastas, unfortunately; my original idea was chicken alfredo with chicken optional for vegetarians, but she was strongly against that, for whatever reason. She doesn't eat red meat, so a fish/chicken choice was big for her.
