Should I do a red meat and chicken or a meat and fish?

    We did beef short ribs and salmon because that’s what we prefer and it seemed fancier. But we only had 15 guests. If you’re having 100+ guests or a buffet, will you feel the fish will be cooked right? If not, chicken might be a safer option.

    Depends on your crowd. I'm in the midwest. Most people I know don't eat fish except on Fridays during Lent at a fish fry.

    I agree that it depends on the crowd. I know a lot of people we are inviting are vegan or vegetarian and the other majority love red meat, so if we had a choice we would do red meat and fish. I've also gotten advice on chicken to only choose it if it's not dry. We weren't going to choose chicken for our main entre, but during our tasting it was tastier than the red meat option which turned out to be a little dry.

    We’re doing filet and salmon but I agree depends on your crowd. We’re from coastal New England so these are generally safe choices here.

    Depends on your guest list. I love fish and don’t eat red meat while my husband is from the south. So you know they like to eat meat and grill lol. I feel like what you guys eat is always best, but use your judgment

    I also second that it depends on your guest list, but also what you and your FH would prefer. We’re going to have steak because I don’t like chicken and I don’t eat fish, and FH is going to decide between the fish and chicken when we try them at the tasting to see what he prefers!

    You know what your guests enjoy. People either love or hate fish. Chicken is generally safer.
