Late Night Snack?!

Hello! My wedding is about 2 weeks away and I really want to do a late night snack. I think they are fun and just another added touch of personalization.

But I went super heavy on Appetizers.. Sweet & Sour Meatballs, Veggies with dip & hummus, broccoli & cheese soup, cheese and crackers.

Dinner is your typical wedding food dinner, chicken, pasta salad.

Dessert is Wedding Cake and Pie

For a late night snack I want to do a Nacho Bar. with Chips, salsa, shredded cheese, jalapenos, black olives & lettuce.

I am on the fence.. tell me your pros and cons of a late night snack?

    Thats not heavy apps.

    I have never seen them timed properly so I think its a waste. After eating all that food around 7-8, I usually see them come out around 9:30-10. We just ate a shit ton of food. Waste to me.

    But... i do love nachos.

    Messy. As a guest, I'd prefer a different food. Pizza, pretzels, ice cream, donuts, etc.

    Late night snacks are perfect. Ours will normally come out about 30 minutes prior to the reception ending. I think Nachos may be messy.....tho delish. Late night munchies should be easy to grab and go: Mini burgers, slices of pizza, mini hot dogs (ours are the pig in blanket type). Everyone loves this after a few hours of drinking.

    I'm only here to say I want to be invited to your wedding if you're having broccoli and cheese soup. Yum. But to answer your question, I think late night snacks are great in theory, but not really worth the money. Could you provide more dessert options? What about an ice cream or popcorn stand?

    It is within my budget,

    My wedding is at 4. Cocktail hour is 430-530 Dinner at 615 done at 11. We were going to use a crockpot and my coordinator has no problem setting it up. I was thinking by 10pm.

    So people could eat from 10-11pm.

    I looked into pizza and hotdogs.. just unsure how to get them hot and at the venue. We cannot cook onsite.. only crockpots. My catering company is bring everything in and will be gone by then.

    I looked into food trucks but I dont want guests going outside and leaving the party to grab food..

    @OG Kathryn Why would it matter if it is DIY... I have hired staff to work the evening.. so if its ready to go then they can set it up.

    I am doing a late night snack but keeping it simple and doing milk and cookies. For me I wouldn't go near nachos after dancing and drinking all night maybe something lighter

    I just started looking Chipotle does just chip and salsa catering... Might be the easiest way!

    I doubt chipolte is open that late? not sure though.

    Do not do nachos in a crock pot. Please. Crockpots trap moisture which is death to crispy tortilla chips.

    You can do hotdogs in a crockpot, however, quite easily, but it's all going to come down to timing, which is usually the problem for things like this, especially if you're doing DIY.

    We're doing a soft pretzel bar and it's honestly one of my favorite things about our wedding. I say go for it!

    We had a poutine bar as our late night snack, done by the venue/caterer--it was an additional cost but so worth it. it gave me life after i'd been to tweaked out to eat enough all day and there are some really epic photos of me with a bourbon in one hand (literally only my 3rd drink of the day, i was high on adrenaline) and fries in the other on the dance floor. no regrets.
