Instruction for Servers

My wedding is Saturday 09/24 and I hired servers. I have know idea where to start and how to instruct them. I need to write a list so that I don't need to constantly tell them what to do during the cocktail hour and reception. I am having a buffet, and I don't want them give guest double portions either. I've heard where weddings have run out of food. Can anyone help me?

    Are they not professional servers? Because if they are professional servers I would think they wouldn't really need much instructions because they should know what is expected of them.

    Agreed with Veronica. Even if the servers were an add-on to the catering company, they will know what to do. Also, if you paid for the number of guests you are having, you should not run out of food. Double portions are not something a server will do at a wedding just because someone asks.

    The Caterer provided me a number to hire services. The girl I've been talking to has served at weddings before but she asked me to put a list together of what she wanted me to do.

    That's unusual and makes me think she might not have a lot of experience 🤔 You might be able to find advice on Google.

    I wonder if she means all that you'd like her to do. Is she responsible for clearing dishes? Refilling water cups? Or is she simply there to just dish out food. She's probably gone to a wedding without clear communication and it ends in a disaster.

    I think it's reasonable for them to ask you for your list of needs (e.g., keep buffet full, clear tables, refill drinks, make coffee at X time), but I wouldn't worry about telling them *how* to go about doing those things, since they are professional servers.

    Just think through your timeline and provide them with clear expectations and instructions about what you need throughout the reception.

    I'd imagine she wants to know what time you want certain things done and what tasks you need them to handle. If she's done weddings before she should know how to handle walking around with hors d'oeuvres, serving food from a buffet, etc., but she probably would need to know how long to walk around with the tray at cocktail hour, when she'd need to set up warming trays for the buffet, etc.
