Inexpensive Rehearsal Dinner

Little backstory: my FH's parents have said that they want to put on our rehearsal dinner as with tradition. However, my FH and I are both aware that they are struggling financially right now, so we really don't want them to have to make that sacrifice. However, they are very conservative and prideful people; somehow we want to make the plans WITH them so they are fully included, but we want to completely take care of the cost without them knowing until the last possible moment.

That being said, my FH and I, after spending so much money on the wedding, want to do a rehearsal dinner that won't break the bank either.

Did anyone do a low-cost low-key rehearsal dinner? What did you do? Any advice for inexpensive options?

    Honestly we are having our rehearsal and then just going out for pizza or something afterward. It doesn't have to be a huge event-- that's what your wedding is for. Plus it should only be the most important people who are going to be vital to your ceremony. So it should just be your bridal party, parents and then the officiant-- basically.

    We are having the rehearsal dinner at my house. I am making my super easy but delicious homemade vodka sauce and boiling up some noodles. Its easy to do in bulk and super cost effective.

    We're using Olive Garden catering and it will be under $800 for a group of about 40 people, and having at the house we rented for the weekend - our wedding is 5 hours away.
