i think my caterer is bailing on me!

Back in January, my FH and I talked to his cousin about catering our party in August. (He always does the family Christmas party and we like his food) He has an Italian restaurant and, in March, opened an American steakhouse type restaurant. When we spoke to him in January, he was enthusiastic about doing our party. We've been trying to get in touch with him for over a week to discuss cost and menu and he isn't getting back to us. I know he's really busy with 2 restaurants and he's got a family, but I'm getting really nervous. If he bails, we've got to find someone else fast. I finally contacted his mom on FB and asked if she could give him my FH's number. He texted my FH on Wednesday and said he'd call that night. And didn't.

So now I'm trying to find a budget caterer near Beacon, NY (Newburgh, Poughkeepsie, Wapengers Falls, Middletown?). Does anyone on here know the area and have any suggestions? I know we can get a restaurant that does catering, but I'm not sure how to find a good one and I live in NJ, so I can really only go try a couple of places. Literally all we need is the food. No servers. We've got tables, chairs linens, alcohol, etc all sorted.

I'm really hoping his cousin comes through. As I said, we, and half our guests, like his food, but I'm getting anxious since we haven't been able to get in touch.
