How to serve root beer floats?

We're having a carnival theme wedding and are planning on having pie instead of cake, donuts and root beer floats. I saw a cute pic on Pinterest that I liked that had the ice cream pre scooped into mason jars. My concern with that is 1) I don't know how to keep the ice cream frozen 2) I don't want to spend that much money on mason jars 3) My fiancé said it would just be "too many dirty cups"

Has anybody seen root beer floats served at a wedding or have any suggestions on the cheapest, most practical way to serve them?

    This seems like way too much work, like one of those ideas that sounds really cool at first but in a few months you'll be like "what was I thinking". But maybe I'm just lazy. Whoever is serving your dessert or providing your dessert should be able to help if you really want to make it happen, i.e. your caterer. Edit: grammar, it's late.

    Would this go over well with your guests? The smell of root beer makes me want to projectile vomit and I know only ONE person that actually enjoys root beer...and I'm married to him. If your crowd would actually like this, talk to your caterer or a local ice cream parlor to see if they do things like this for parties/weddings.

    As a caterer in a former life....

    the phrase "root beer floats" is way more attractive than the actual item.

    You need enough freezer space to have pre scooped balls of ice cream in glasses or mason jars or whatever ready to go. Then they get transported to a station and someone pours root beer over them.

    I don't see the appeal actually.

    As a former event manager, we would HATE when people would request this. It is labor and space intensive to do it the right way. The idea of it is super cute but it needs to be done by professionals or else it gets SUPER messy!!

    Yeah I would bring this to the caterer. It sounds super cute... I don't personally like them that much. I know our venue doesn't have much freezer space... does yours? You know your crowd-- will they appreciate how much you may have to put into it? If not maybe a root beer icee?? Just a thought...
