We got married in the NC mountains. We had bluegrass musicians for the prelude and ceremony and a bbq buffet with servers. Our centerpieces were gold glitter mason jars with roses in them. Everything else was elegant as far as the decor, set up, ceremony, and reception traditions.

That is tricky. We are kinda in a similar bracket. We are getting married at a winery so we’re doing some rustic elements with fall colors. How to pull off my vision country elegance 1

But the winery itself is so elegant that between the venue itself and our attire, I think it will blend well.

So maybe its just me, but when you say Elegant Country Theme, i kind of think of a debutante ball. Something with grandeur but country elements?
I think you can absolutely pull it off. I would try for a historic mansion venue. Your local Historic Society should have cheaper options. I would try and add in the elements you feel would covey your theme.
Maybe local wildflowers, daisies, and babies breath, instead of formal roses? Also your food and music convey your theme stronger than you may think. I would avoid the mason jars, burlap, sunflowers though. They are just a little cookie cutter, because they are too popular.

I want to preface everything by saying, while I am a huge country music fan, that I am not a huge ran of country/rustic weddings as I feel they are overdone. I do think that is going to be rather challenging to pull off, but I do think it can be done. I know BBQ is a popular choice for country/rustic weddings. If you want to do BBQ, you could do a carving station. I would avoid anything messy like ribs or pulled pork sandwiches. I would pick food that doesn't require using your hands, but I would say apps can be an exception to that as most apps are finger food. Cute things like mini sliders as passed apps would be classy while still having that country feel. Mashed potatoes and mac and cheese are two very popular country style food options. My venue offered a mashtini station which you could do or a mac and cheese bar. It would incorporate the country style food in a more fun and elegant way. I would also make sure you real utensils and plates rather than plastic. I know lawn games are very popular for a country/rustic wedding, but if you want to keep it classy I would avoid having them as they definitely aren't elegant. Sunflowers and babies breath are popular flowers for a country wedding so you incorporate those, but I would avoid using mason jars or anything that look like jars in my opinion they aren't classy. I would use actual glass vases. I would also only do hints of country/rustic rather than full out country/rustic. I also think your venue and attire will play a key role in determining the style of your wedding. If you want something more elegant, I would have the bridesmaids in long dresses rather than short. Short dresses tend to be less formal thus less classy/elegant. I would also have the guys where either tuxes or suits depending on how formal you want to it be. I know cowboy boots are popular for country/rustic weddings, but they aren't very classy or elegant so I would wouldn't wear cowboy boots if they can be see with whatever dresses you pick. I would also let your guests know the attire type like formal, cocktail attire, semi formal, etc.

My brother and SIL had a country chic wedding, and it honestly should be in a magazine somewhere. They got married on a farm. They somehow got a door in the field which was opened to reveal the bride. The bar was in the barn, which was set up with high tables. Then there was a tent outside with tables and chairs. Barbecue was served. She had tons of blue mason jars with flowers for decor. It was probably the prettiest wedding I've ever been to.
