How to keep a cake cool?

Caitlyn, on February 13, 2018 at 12:57 AM Posted in Wedding Reception 0 19
So I’m have an end of June wedding in a barn. There is no air conditioning inside the barn. there is no refrigerator or anything and I’m super concerned about how we are going to keep our cake cool from the time it is delivered in the afternoon until 8:00 at night when we cut it?! anyone have any suggestions/tips? It is a chocolate cake with chocolate buttercream frosting.

I was worried that they would be loud/obnoxious, especially since the cake table is in a prime location ☹️

Unfortunately, buttercream frosting without air conditioning in June will melt; no way around it. Even more unfortunately, so will your guests.

Know anyone with a chest freezer or fridge you can borrow? Or maybe rig something with a plastic tote and ice? That's tough. If you're worried about the cake with no air conditioning won't your guests be uncomfortably warm too though?

This sounds awful for your guests more than for cake. Also, why is your cake being delivered so early when your wedding is at night?

An non air conditioned barn in June? Your guests might stay long enough for cake to be served.

There's really no way to keep the cake cool enough for it not to melt. It you try fans, be prepared for your guests to stand in front of them.

You will not be able to present it for long before you cut it. I would suggest a large cooler with dry ice or at least ice packs all around it. This is going to be a hurdle for you, I would consider other desserts instead of a big cake and just have a small one for cutting that you could easily put in a cooler or the location/ caterers refrigerator. I am a baker and would not be willing to put my name on your wedding cake if you did not have a proper place to store it.

Do you know anyone with a motor home or camper who would agree to bring it to the site? Some of them have air conditioning. You could have the cake delivered and stored there, and brought out shortly before cutting. Make sure you also figure out how you are going to safely move the cake to the cake table. Level ground and a cart with wheels would be important

Goodness, the last thing I thought about keeping cool when I read this post was your cake. If it is so hot you're worried about your cake melting, imagine how your guests will feel.

I would not be sticking around for a wedding that has no air conditioning in June.

I really HATE to be so redundant, but honestly OP, I'm seriously curious on how you plan to keep your guests cool... I would be SO uncomfortable. I am having a June wedding in Florida (so it will be hot as heck), but will be in a very air conditioned venue...

Seriously... And I'm usually one that has an UO here on WW for a lot of things, but to allow your guests to overheat is just wrong....

@OP can the person making your cake deliver it later in the day? If the person making it is aware of the time gap maybe they can work with you? I'm a cake decorator and would bend over backwards to make sure that cake doesn't melt. Or could you refrigerate it somewhere close and have someone go get it when its closer to the time to cut? That cake will melt on you with that amount of time sitting in the heat 😕.

It depends, humidity will be a factor as well. If the cake is kept in the refrigerator prior to, it will start to sweat immediately in the heat in June. If it is kept at room temp it will take a little while longer to notice the changes. If the baker uses a mix of shortening and butter for the buttercream, in my experience it holds up better.
