How to Avoid wasting wine

Hi All! We're having our wedding at a winery so we have to purchase all of our wine from the venue and cannot bring in outside alcohol. Their wine is extremely good, but we're talking between $30 and $50 a bottle. We purchase wine by the case (12 bottles each), get a 10% discount, and only pay per empty bottle. We're inviting 100 guests, at least 75% of which will be drinking. We had set aside $1,000 for wine but realised yesterday that that probably will not be nearly enough. We want our guests to have enough to drink, but we also don't want to go broke. Our biggest concern is that people will have a glass of wine, not finish all of it, and then go back and get a new glass of wine (i.e. wasted wine). We are also going to have a few different types of wines. Some will be more expensive than others.

How can we control consumption so that wine isn't wasted, and is there a certain time when we should serve the really good wine vs the pretty good wine.

Should we offer the full selection of wine for cocktail hour and dinner, and then only the more affordable wine for dancing?

    Would they possibly buy back the wine you don't use? I know we were looking into a place like this and they told us that any wine we didn't use they would just buy it back that way we weren't left with it.

    Hi Vannesa! I should have clarified. They'll set aside wine for us by the case, but then only charge us for the bottles of wine that have been completely finished. Therefore we're only paying for what was actually used (we'll get the wine bill after the wedding). We can also set a cap for how much we're willing to spend on wine.

    Oh okay gotcha! I would serve the good wine during dinner only because people like to have good wine with their meals cheaper wine for dancing.

    Is there going to be table-side service during dinner? If so, I'd stick with a more affordable wine during dinner - a lot people who aren't wine lovers will have a glass during dinner but may not finish it - and then have the nicer wine available at the bar if people ask.


    If it's all bar-service, I'd probably just ask for fewer bottles of the nicer wine, and when it's gone it's gone. People can drink the affordable wine all night. And after a few drinks they won't be as picky anyway!

    It's our call on if we want table-side service or just bar service. I thought it'd be nice to have the table-side service but I see what you're saying. For the most part, the drinkers will be over the age of 40, so they should know their preferences. If they only drink one glass of wine with dinner then that'll be good haha. We'll have a wine menu out so people will be able to choose their wine as opposed to just saying white, red, or sweet. I like your idea of just putting a few bottles of the nicer wine out. We can tell the servers to only pour so many of those bottles and then switch to the more affordable wine (which is still really good!)

    I would think limiting options (1 white, 1 red, champagne) would help because too many choices = too many opened unfinished bottles.
