How much to tip caterers?

The caterer we have in mind does not have a service charge or tip already built into the price, so I want an idea of how much I should plan to tip on the day of. I've read in various places different things and would like to know what is proper etiquette or what others here have done/plan to do. I've read that people commonly tip 15-20% of total bill, but that seems really excessive. We will be having a relatively small wedding (about 100 guests), but the catering bill still may go into about $10k range. I've also read that some people tip a flat amount, such as $100 per cook, $50 per server, etc, which would be a lot more affordable.

I would like to be respectful and show appreciation (hopefully, if deserved), but I also don't want to break the bank even more so than we already have. Any advice or thoughts would be appreciated!

    Our catering bill is almost $8k for 75 people. We're tipping 20%. It's not like all they're doing is plating the food and going home. There's SO much havoc that goes on that you don't see and these people deserve decent wages. Just like your waiter or waitress. They get minimal pay.

    We are charged $25/hour per server. I am sure some of that covers taxes & stuff, but they are making a LOT more than your average restaurant employee earning a tip wage of $2.53/hour.
