How do Signature Drinks work?

We are providing the alcohol for our wedding and we are hiring a bartender to serve. We will be doing beer, wine, and a signature drink. Our current idea for signature drink is a gin-gin mule (gin, ginger beer, lime, and mint).

Should signature drinks be something that can be made ahead in large batches? If so I am not sure this will work because you wouldn't want the ginger beer to be flat when it is served.

    Just purchase the necessary ingredients for the drink and the bartender will make them as they are requested. That would be the easiest way to do it.

    ETA: Where I work, we've done both, but I'd recommend this method so the ginger beer doesn't go flat Smiley smile

    It helps to have a batch ready and then keep on making them. Big batches with a ginger beer is not a good idea because the ginger beer would go flat I would think and there is big room for error when making a mega batch of anything.

    Thank you! That was my thought but I just worried it would take too long to make them individually. Thankfully I will be having a relatively small wedding so that shouldn't be a problem.

    @Kristin, we did a wedding where I work of about 200 guests. We made each signature drink individually when it was requested at the bar.

    Their drink was similar to yours (Moscow mule) and we just kept ourselves stocked on everything to make it.

    Also, not everyone ordered one at once, which was good. We made most of them after the dinner service.

    How we do them where I work is this way. Our bar manager does make a big batch of the sig drink beforehand and we will pass them during cocktail hour.
