How do action stations work?

My FH and I are starting to think about our reception, and the concept of action stations is completely new to me. I was originally set on a plated, served dinner, but I am starting to lean more toward action stations due to the variety of foods available and the vibe I'm going for at the reception. Since we'll be in New Orleans, I don't want the reception to be too formal; I'd rather people to move around, eat, drink and party -- but with some sense of order. With that said, I'm confused as to how an action station reception works. Most receptions I've attended were plated with somewhat of a "program" or timeline before dancing. What's the flow of a reception with action stations where people are free to move about as they please? I'm just wondering how you handle the timing of other reception "events" -- first dance, speeches, cake cutting, etc. with some sense of order with action stations. I don't want people walking around and mingling during those events. I'm lost . . . help! Thanks in advance.

    Dinner still has a set time frame is served. Your caterer will not be serving dinner throughout the night. They’ll likely allot an hour/hour and a half for food then begin clean up. Sorry if that doesn’t answer your question!


    For example: we’re doing buffet style. Right before everyone gets excised table by table, we’re doing our first dance. At one point during dinner speeches will be given. We aren’t calling attention to us for our cake cutting, that will be a moment between us/our parents. Then parent dances to open up the dance floor.

    Daughter had a buffet with a mac 'n cheese 'action station', then for late-night snacks we did pretzel bites with mustard/cheese and grilled cheese/tomato soup shooters.


    Both were well-planned by the venue food service staff.


    Cocktail hour went off flawlessly after the ceremony. Then, as follows:

    -Introductions and first dance

    -Speeches/Toasts (there were only three...father of the bride, maid of honor, best man

    -Dinner served...guests went to the buffet and the action station was open for an hour, set up just outside of the buffet so easy for guests to get to

    -Dancing for 30 minutes, cake cutting and dessert served followed by more dancing

    -10pm (about 2.5 hours after dinner) the late-night snack action stations were set up where the buffet was, open for 45 min.
