I just called the hotels I was interested in having room blocks at and asked what the rate would be for my specific weekend. Then I booked whatever the amount of rooms needed was under the name of our wedding (our last names).

I would call local hotels & just ask how their blocking works. Some make you put a deposit down for a % of rooms. Some do complimentary blocks.
