It may depend on how long you are trying to go for.

I would hire a travel agent. Ours was only $70 and we were very impressed! We gave her the budget $3000 for roughly a week, and she came back with 4 different options. We ended up picking an all inclusive place Monday-Sunday for $2,700. Totally worth the $70 to not have to plan myself! I'm planning enough crap lol

Have you thought about cruising? They're relatively cheap and mostly inclusive.

Cruises are relatively cheap but depending on where you live you may have to pay for a plane ticket.

Have you tried EuropeanDestinations (now merged with TripMasters, I think)? We did a 11-day trio to Greece and Turkey for only $1500 each, all flights and hotels included. It’s really simple to build an itinerary with them.

The cheapest portions of Mexico are most likely going to be Cancun or Cozumel. I believe all the low cost airlines go into there as well. Try an AI in Cancun, but be sure to include transfers from the airport to the hotels. You can buy them ahead of time with most of the resorts. Leaving the Cancun airport you will be hounded by all sorts vendors trying to sell you different ride options or tours, just go straight to your reserved transfer bus. We go to Cancun all the time for quick and cheap beach getaway's, the RIU resorts are very nice properties.

We're doing a cruise and driving to save money on flights. We live about a 14 hour drive away from a port though. So we'll pay for gas and a hotel.

You can find a decent cruise to Mexico for less than $1K and then flights shouldn't cost you even that much for the both of you round trip. They have cruises leaving L.A. on Carnival for 3 - 4 nights for less than $1K. We went to Enesenada last November for about $800 for a 3 night stay. Our honeymoon cruise is a 5 night to Cozumel and I think we paid about $1200 after gratuities.

It's totally doable on your budget. Don't discount a cruise!

I’m also in Chicago - Check out Cheap Caribbean’s website, you can choose MDW or ORD for flights and filter by budget, location etc. Just cross reference with trip advisor and other reviews sites before booking to make sure the resort fits what you are looking for!
