My nana who lives far away very much wants to be involved in planning. We don’t really want a lot of people involved but want her to know we love her. What is something small we can give her to do to show our love without opening all the plans up to discussion?

Does she have a hobby? Crafting, sewing, baking, etc? If so, ask her to do something that involves her skill or hobby. She could bake cookies for favors, make your garter or veil, craft some signage or stationary. If she doesn't have a hobby, choose an aspect that isn't super important to you and let her run with it. For example; decorating the cake table, favors, finding a guestbook and decor for the guestbook table.

Maybe she can find your "Something Old" or "Something Borrowed" if you have that in your plans.

Sometimes I like to narrow it down to two or three choices I love and let people pick. I'm happy because I normally have trouble choosing once I get narrowed down to two cakes or two bouquets and they're happy because they feel like they got to make an important decision for the wedding.
