I need an idea for a chicken dish for buffet style wedding. I am doing the food, need an inexpensive, easy chicken dish.

    I think just about any roasted chicken breast dish will work, it is just a matter of how much work you want to do. If it were me I would do the "marry me" chicken. Just sauté the chicken just enough to give it color and just finish it off in the oven.

    Chicken piccata is popular at buffet luncheons I've attended. I expect it is easier to assemble, looks pleasing, and makes a filling entree. Main components: pounded slim chicken breast, lemon, capers, flour. Best wishes.

    For hot dishes I d either do chicken Parm or lemon grilled chicken ( which can be served hot or cold) for a cold dish you can do chicken salad. Have fun!

    Question: are you planning to cook the meal yourself or hire a caterer, even if that’s a local casual restaurant you love that offers drop off service? Chicken in banquet settings is very easy and common to undercook, which is dangerous. It’s also not feasible for be in a dozen places at the same time and many venues require food from a licensed insured caterer/restaurant to prevent food safety lawsuits and incidents. Even a local park department owned facility has those requirements.



    Search on Google or Yelp for local restaurants that offer inexpensive catering and see what they serve in your budget. You can’t go wrong with Chicken Parmesan from a favorite Italian place or fajitas from a local favorite Mexican restaurant with the common sides.
