Food Truck + Sufficient Appetizers??

Hello beautiful brides!

Would you be worried about people being hungry and cranky with what I'm currently thinking?

We are having a taco truck for our wedding food (very excited about that!) and will most likely be going with an open seating set up... The food truck will serve for 2 hours and it will be a "go up when you want" type thing.Our wedding is on a Friday night, so I'm thinking that the truck will be open at 6:30 for food. I realize that is getting a bit late for dinner, so we are also going to have buffet style appetizers of chips with guac & salsa, fresh fruit, hopefully empanadas, and *insert a suggestion for me here*

A lot of people have booed the idea of a food truck because of potentially having to wait a bit - our food truck has said they can serve all of our 70 guests their first round within an hour. I'm hoping the appetizers will be a nice filler and it will feel like a cocktail hour.

    Will all this food be set up and served at the same time for the same time frame you mentioned (2hours)?

    My only concern is that after that timeframe and both are closed, you'll more than likely have guests that get hungry later on in the evening depending on how long your reception will last. I know that as a guest that loves to dance at weddings, I've always looked for extra bites to eat later in the evening because I've danced off my previous meal lol!

    I really like the idea of food trucks at weddings, and they def. can work! You just have to make sure you have enough food for everyone, not just for those 2 hours, but also thinking into the future/ later in the evening.

    I think your instincts are good: that you need to make sure there is enough food available for people while they are waiting that first hour for their first tacos. Chips/salsa/fruit is not that filling (but delicious!), so empanadas are a great choice. I would add one more filling appetizer to be available from the start and throughout the dinner period. Also make sure that what is available to order along with the tacos makes up a full meal (e.g., beans, rice, salad).

    I totally think this can work. We’re also doing a taco truck plus a bbq truck, but we’re expecting 150. If you’re worried about enough food, you could see if they’ll add a side onto the tacos. And I’d also recommend dismissing tables a couple at a time to minimize lines and make sure everyone gets to eat. People are just judgements about the idea of food trucks because it’s a newer idea.

    With 70 people, I'd at least do assigned tables


    The reason people poo poo on food trucks is because of the wait

    As a guest, I'd be frustrated to wait an hour to eat on a Friday night. Will the apps be available beforehand/around 6:30? If not, you may also want to mention to guests that they may eat closer to 7/7:30, so they are prepared and can eat beforehand.

    With such light fare, 30 will be back in line for seconds before all 70 are served. Service will be very clogged. You may want to have a table of cornbreads, or lemon breads or sweet bread s or fruit cups so those up for seconds are delayed till others are served, the first line. Do not open it till many are in line, so it adds into the service loop to slow people down.

    I feel like people will be spending a lot of time waiting in line. Is it possible to have more than one truck to ease the traffic jam?
