Food Truck Logistics

I'm getting married next November, and I'm trying to get a lot of the planning out of the way now during the summer before the semester starts (I'm in grad school). We are getting married in a Historical Park outside of Philadelphia.

There will be about 65 guests, so I think having one food truck should be good (The truck said it should take 30-40 minutes), but I'm nervous about forcing everyone to eat tacos (our favorite food). There will be salad and other appetizers offered buffet style, but still.

Additionally, I don't know what to put on the tables! The truck supplies utensils and plates and such. Should I even have seating charts? I want to have the favors double as the name places. Oh and a centerpiece, of course. Is that enough?

Lastly with the informality of the truck, when should the first dance/speeches/cutting the cake be? We have the venue from 5-10 (ceremony and reception).

I would love advice from anyone who's had a food truck cater their reception!

    We got the utensils from our caterer early and made cute pouches for each seat so the table didn't look empty.

    look into 2 trucks if possible, and do a seating chart for sure!

    We are having a food truck at our wedding but it is VERY different than the food trucks you see out and about. They will cook all the food on the truck and in the kitchen at the venue and plate the meal to be served and pass the appetizers during cocktail hour. If I didn't tell you it was a good truck you would never know.

    With that said, you need at least 2 trucks at your wedding. The lines will be long and the backup large-- especially if they do not do weddings.

    As far as asking your guests to eat only tacos (with the buffet sides) I would probably get a second truck with different foods to allow options.

    I do like the idea of two trucks! What food would go with/complement tacos? I don't want BBQ or Italian. There are so many food trucks in my area!

    Treat everything the same you would a buffet-- it's the same concept of people getting up to get their food and then sitting back down.

    We didn't go the food truck route but we looked into it a lot (we opted not to because our venue was on the second floor and we didn't want to make people go down stairs or clog up the elevator). But while we were looking into it... two trucks was definitely recommended even with a wedding that small. We were also advised you'd need to choose between having everyone get the same thing, which can take less time because they can pre-make a lot, or letting people order from the regular menu, which takes way more time, but for us was more appealing than everyone getting a pre-selected dish.

    Hi Jourmarie! We're in the same area and are thinking of going the food truck route as well, and are having a lot of the same concerns...

    I like Kirstie's idea of the pouches. That looks cute with the menu printed on.

    We really like Jules Thin Crust Pizza, and are considering them as an option. Have you looked into them at all. A coworker of mine said she used them for her wedding and it was a big hit. It doesn't necessarily "go" with tacos, but feeds into the casual vibe it sounds like you might be going for. Some quick digging shows that they're $1360 for 70 people on a Saturday. It says you get them for 2-3 hours, and from what I recall my coworker saying, it is all you can eat. Smiley smile

    I would be interested in hearing what truck you are using, if you don't mind sharing. Tacos are some of our faves too!
