I have 56-58 people. Would two entrees, three sides, one appetizer, and two desserts be too much for them? I also have the option for two entrees, two sides, and two desserts. How much food is too much or too little for this amount of people? (This also includes my Partner and I)

That sounds normal to plentiful. Are you having a caterer? They will help you with menu options based on your headcount. If there is a buffet, you will have leftovers to take home.

I would go for 3 sides. It’s better to allow options because people may not like or be able to eat everything.

You can't go wrong with more variety. Will the appetizer be served alone before the entrees are served? If you're not having cocktail hour, I would replace the appetizer with another entree.

Are you having a cocktail hour before dinner? Or going straight from the ceremony to dinner?

Our ceremony and reception is in the same room. We will do cocktail hour for speeches if any and pictures.

Then I'd definitely serve an appetizer if guests will be waiting a while after the ceremony before dinner.
