So I have everything all set down to the salads hors deourves (how ever you spell it) appetizer, late night snacks, desserts except for my entrees!!!! My caterer does everything. I know I need steak chicken and fish option but what kind?? Things to factor in? Do a lot of people hate mushrooms? Ugh its so much to try to guess

    What do you mean what kind in regards to the meat? All three or which of the three? I like mushrooms but can you have it on the side for those that do? Best to leave it off if not.

    So I’m having an option of steak, chicken, or fish. But if I did like filet mignon, chicken Marsala, and swordfish. Or should I do like short ribs, roasted chicken breast or salmon kind of thing.

    You know your crowd best, but we decided to do chicken breast, salmon, or butternut squash ravioli as our 3 options for the plated dinner. A lot of vegetarians these days don't eat fish (our caterer also reminded us that fish is one of the most common food allergies), but if all of your vegetarian guests are okay with eating fish and don't have any allergies, then you should be fine. Or you may not have any vegetarian guests at all, so this might not be relevant.

    What are your hors douvres? I always coordinate my apps, hors douvres and entrees


    For fish, I always stick with something that almost everyone likes - salmon is safe. Or a nice meaty whitefish

    My recommendation would be to ask your caterer for their most popular chicken, fish, steak and vegetarian options and prices. Do a tasting with your top choices & those within your budget. At the tasting you can better decide what to serve

    We’re serving filet mignon with a red wine Demi glaze, salmon with a rosemary buerre blanc and chicken with yellow tomato coulis. There’s a vegan option as well. We’ve gotten about 1/3 of our rsvp’s back and 75% of those have chosen the filet.
    I would wait until you’ve done your tasting too. I didn’t initially plan on that chicken option until i tried it. Everyone will have ricotta mashed potatoes, steamed vegetables and appearantly a little flower hahaEntree Ideas 1

    Vegetarians, by definition, do not eat fish. And shellfish is the most common allergy. So i think you’re safe with a fish like salmon and a vegetarian or vegan option. But you’re definitely right, know your crowd. We’re also serving salmon as our fish option and our vegetarian option is also vegan because I have a number of family and friends that are vegan. Butternut squash ravioli sounds really good though!

    Good point--there's so much gray area these days and I guess the proper term to what I was referring to would be pescatarian! Anyway, I completely agree on not choosing until you do your tastings. A lot of people can eat salmon but not shellfish/whitefish so salmon is absolutely a safer bet. To the OP, I would consider adding a vegetarian option if you know you have guests who won't eat meat or fish. A bunch of our non-vegetarian guests actually ended up selecting the butternut squash ravioli simply because they thought it sounded good and they loved it!

    We are doing chicken Marsala. I am not a mushroom fan at all, but when we did the tasting they were easy to eat around and I loved the sauce.

    Same with my vegan option too! It’s a vegetable Napoleon, sounded really good and a bunch of people have chosen it that didn’t need to (saved us some money too, the filet is $20 a plate more than the vegan 🤦🏼‍♀️)
