I would go have a really nice dinner!

My FH and I plan on doing this as well. We will be going out to a nice steakhouse for dinner afterwards.

Many people do this. In the early 1900s-1970s, it was very common.
Make sure you have 1-2 legal witnesses depending on what your state requires. Ask your officiant if they are provided for you or if you need to ask someone to attend.
Afterwards, you don't have guests to entertain so you can do anything you wish, dinner, roadtrip, etc.

Not sure if it will be a destination elopment? But I would plan a couples spa day maybe the day before to prep and then the most romantic dinner for wedding night.

A photo shoot around whatever fabulous area you’ll be in? Going out for a lovely meal would be on my list too, both of us all dressed up.
