Eloping witnesses

Grand rising all,
My fiance and I are eloping next July and will have no family or friends as witnesses. It will be near a mountain in Asheville, NC at 7:30 pm. I'm really concerned about witnesses since we need two to sign our certificate. Anybody ever eloped alone in NC? Have any trouble getting someone to sign?
