Elopement in Italy- Amalfi Coast. Need help!

My fiancé and I are set on eloping in Italy this fall/winter. We are looking to have a symbolic ceremony as both of us are Baptist, not Catholic. We will be getting officially married in the states. It will just be the two of us but we still want the wedding; dress, photography, video, flowers, ceremony, etc. looking for help on recommendations to do this from thousands of miles away. Or recommendations on planners in this area to help me. Also places to stay?

We are spending one week in Positano on the Amalfi coast for our honeymoon in June. We booked it in March.
Please do not delay in book in your hotel- a lot of of places we wanted to stay at were already booked. Amalfi is a very popular destination!

Lots of people from the UK and Ireland got to sorrento to get married, we are just back from there its a fabulous town. Also hotel Bristol is amazing, that was where we stayed, they have fabulous suites and a villa,we got upgraded on arrival and were given a special rate as we were on honeymoon. I don't know of any wedding planners there personally but I know weddingsonline.ie have some listed.
