We’re doing a partial DIY for our wedding catering—some dishes from vendors, some prepared by family ahead of time. One thing we’re trying to figure out is storage.
We have a decent-size commercial fridge at home (a Wilprep Reach-In Refrigerators), and we’re considering prepping certain items 1–2 days early.
Has anyone done this? How far in advance did you prep things like salads, desserts, or cold appetizers? Did they keep well in the fridge?
