DIY Nacho Bar. help!!!

So we've decided officially on nacho bar. My aunt thinks it will.cost to much the way I envision it. I see, in my mind, the WHOLE spread. Salsa, beef, chicken, spanish rice, guac. ,jalepenos, olives, corn, black beans, refried beans, onions, tomato, lettuc, cheese, etc. Does this sound like too...

Does this sound like too much?

    Lirana, I can't believe you went to all that trouble for crunch those #'s. You are so stinking amazing! And I think leaving the rice is more for the vegans (that I don't even know of any) and for a filler. Could def be omitted I guess. But lettuce and tomatoes I think will be out of seasons by end of sept. So willI avacados Smiley sad

    Yeah, that's the nice thing about being in CA. Stuff is in season all year round. I forgot to mention... you should go buy non-perishables (like salsa and beans) right now!!! All that stuff is on sale because Cinqo de Mayo is this weekend!

    (They'll porbably go on sale again for memorial day, 4th of july, and labor day too... so no need to panic. :p )

    I'm not a math person so I can't help with the number crunching, but I can help with putting away some of these nachos. My mouth is literally watering right now.

    I love nacho parties!

    This is what I do:

    Fresh made tortilla chips: blue corn and regular

    Regular store brought tortilla chips

    yellow cheese and white cheese (yes, I have 2 fountains)

    tomatoes, white onions, red onions, chile verde, french fries

    chilly beans, doritos, sausage, chorizo, bacon, pico de gallo, sour cream, barbecue sauce,tyson breast strips, and ground beef.

    And preset the tortillas on portion plates so the guest can add the toppings with out the mess

    And Amanda, you're cracking me up.

    Good idea on the salsa now! It would be wise to do it before sinco de mayo! Love that. Thank you all so much!!! Can't wait to serve these nachos (then have some on my honey moon because I know I won't be able to enjoy them at the reception Smiley winking too much to do!

    Awesome idea! Is this the only food? If so, I would keep the rice. I agree with Lirana about keeping the jalapenos and olives and getting rid of the fresh lettuce and tomatoes. Also, I've never seen corn on nachos either (maybe that's a regionally thing? I'm from AZ and CA). You could probably get away with only doing one meat and one bean, but choices are always good. Now I want nachos! Smiley smile

    Haha..corn can easily be removed. It will actually bring down the cost a bit. I love options when I'm at an event, I think people will like this! I am getting so excited now!

    If you do end up at getting rid of the fresh veggies cause they're out of season, I suggest adding sour cream if it's within budget. I love sour cream.

    I love everything you have listed. If that is your main menu, then you should have a great variety and I think your folks will love it. Try going to Costco or other food warehouse and see if you could get stuff in bulk. Arroz es muy necesario!

    Are you planning on having meat? I didn't see you mention it but I saw other people mentioning it. If I was a guest at your wedding I would be happy with just chips, cheese, jalapenos and guac. No need to get all fancy shmancy with me!

    What a great idea to have a nacho bar! Costco sells a HUGE bag of tortilla chips for dirt cheap! They also have shredded Mexican cheese that is also reasonably priced. They also sell packages of guacamole (wholey guacamole), that is really good and comes in packages of 3. I agree with the comments about keeping the rice ...it's cheap and a filler. You could even mix some chicken in with the rice if you want the chicken to go further. I would keep the jalapeños and olives, but forego the onions. Sounds like it will be a great addition to your celebration.
