diy Desserts

We are thinking of having a dessert table instead of the traditional wedding cake. Anybody DIY a whole dessert table? I’m worried that it will be a bigger undertaking than I imagined and will end up regretting it even though I enjoy baking. Also worried about how fresh everything would stay before the wedding if we baked Wednesday, Thursday, and Friday and got married on Saturday.


Ideas we had:Cookies, brownies, pies, s’mores, cupcakes, cookie shots, and maybe a monogram tart cake

    I think that if you bake Thursday and Friday it can still be fresh as long as you keep the desserts sealed. Would you do all of the baking by yourself or will you have help? I only ask because that can add extra stress for you

    It would be by myself or have a friend or FH help. I’m taking Thursday and Friday off work so would have all day. It is for about 100 guests.

    Are there tasks other than baking that you plan to do on that Thursday and Friday before your wedding? If so, I would be cautious of taking on the task of baking all of your desserts too. I think they'd still stay fresh, but it may add a bunch of extra stress in the days leading up to your wedding. If you know you can get it done with no issues, go for it! Otherwise, maybe bake a few of the dessert options, and purchase the rest from a local bakery?

    That is alot of work! Some desserts are best when fresh as possible which will cut into your getting-ready time. Also, depending on your venue, unless it's your backyard, most if not all venues require any and all food to come from a licensed caterer/baker. Especially during a pandemic.

    If I were you, I would make the cookie dough and pie dough ahead of time and freeze them. This will cut your time in half and you would only need to do the cupcakes and fillings fresh. However, this is a lot of work and maybe it would be best to do 1 or 2 homemade baked goods and order the rest from a bakery. In terms of time and cost, the bakery prices might not be much more if not cheaper then doing it yourself.

    That’s a lot to take on right before your wedding! I agree with the previous person who suggested getting some from a bakery & some homemade. There’s usually a lot of last minute details that pop up right before the big day. I have a tentative schedule made for the week prior to the wedding & I couldn’t imagine trying to fit that in. But this is your wedding- if you think you can take this on, then go for it!

    I love to bake and I’m usually the go to baker at our family events but that’s a lot to do before your wedding. And although you bake regularly anything could go wrong that could set you back on time and cause additional stress. I would advise against it.

    Seconding above, I’m the go-to baker for events and I don’t think it’s the best idea. So many brides here mention hardly sleeping the night(s) up to the wedding bc of last minute problems, vendor issues, changing RSVPs. Unlike if diy decorations don’t get finalized, having a dessert shortage would be noticed.
    My question is why do you want to do it? If it is because you love baking, will it even be enjoyable for large quantities, on a time crunch, and directing your MOH and FH what to do? If it is to impress your guests, it sounds like you are probably well-known for your dessert talents, will they even realize the hard work you put in?

    I had a small micro wedding and even then the final few days before the wedding were amazingly chaotic. There are endless errands, decor details, nails, constant calls/texts confirming the final timeline to key vendors and VIPs (parents, wedding party). Plus you want to enjoy and soak it all in. I can’t possibly imagine squeezing time for something else such as baking. Good luck!

    I would definitely find help I wouldn't do it for myself. Only saying that because the last few days before the wedding seems to get a little hectic and you don't want to tire yourself out for the big day. It's definitely doable just get help
