Hi there!

im currently in the planning stages of my wedding and even though it’s 10 months away I still want to get the hard planning parts out of the way.

the reception will likely be a lunch time ordeal with about 50-70 people (I havnt finalized the list yet...I’m getting there though). I had a caterer in mind but I was also just suggested that I could do crockpot pots and make all the food ahead of time

i have a couple years of food service experience and have served large groups 3 times a day and I know of some tricks to make things easier on me

i thought about doing a soup bar with a few different kinds of soups. I have some recipes in mind I could make 1-2 days prior, I could then package it up and when it comes time to the day I could have someone throw it in the crockpot. On the side I could provide some other deli bought goodies to go with

if I plan and practice very diligently is this possible? Or is it likely to end up as a disaster?

How many pizzas will be in the oven for an hour or more? They’re gonna be rock hard and inedible.

Please dont do it for all the same reasons posted. It seriously is a disaster waiting to happen. Go for the pros & hire a caterer.

I don’t think it would be ideal for you to do this at all.. becuase of stress, who really wants to worry about having to make food for that many people, it’s your wedding day you’re going to have a lot of other things to be focused on.
And I do somewht agree with what some other people are saying about sanitary issues, I personally don’t like to eat anything that has been prepared in advance, but is also don’t eat left overs so that’s just personal I suppsow

I wouldn't do this yourself. If you wanted to stick to the soups, see about getting Panera to cater! I know they do it Smiley smile and then you could have other sandwiches and salads and stuff too

I think you should not put all that stress on you because a lot is already going to be going on that you will be stressed over

Wow. I'm glad this is a year old. What a bunch of SNOBS! Rather eat McDonald's than a potluck? Do you know that those employees sometimes use their bare hands to prepare food? We did this for our wedding and it was fantastic. No one got sick and everyone ate. All a home cooked meal. Y'all need to get some real families.

Amber I thought the same thing. I guess most of these people never looked into how food is catered. A lot of the food, as in most, is precooked (hours/days before) and brought to the site and reheated. The soups are cooked days in advance because it holds up well. A lot of food taste better when its cooked the day before. That chicken these people order at find dinning are cooked hours in advance. I laughed out loud at the thought of some of these very naïve people that actually believe the food they go out to eat (or at wedding) is actually "cooked" minutes before they actually eat it. The only reason most of it is warm is chaffing pans but most of these people are too naïve to realize that stainless steel fancy serving pan is sitting on top of a steaming chaffing pan...

warming food cooked hours if not days before

Honestly I find this difficult to believe. If a restaurant were to do this, the health department would be anonymously called and the restaurant shut down indefinitely. I’ve worked in the food service for years when I was younger and nothing was allowed to be kept for days. It was served fresh or not at all. I would never hire a catering company who did what you are suggesting is “common” because it’s a major food safety violation.

JUST WOW!!! I don't know the people you all associate with but, WE ARE doing a crock pot and electric roasters for my sons wedding in May. All I can say is if you know the people that are preparing the food to be safe, clean and sanitary then you should do what will work for you and your budget. Not everyone can afford a caterer (lots of money wasted), Again be sure that the people preparing your food are people you really know and are clean!!!. Also for the people checking on the food during reception, ask an aunt that knows how to keep an eye on the food and check temps. I wish you the best of luck on your day. I hope not too many people scared you, but you do need to be safe on what foods you will be serving.
