We see it on the forums all the time: someone considering self-catering for his/her wedding to save a few bucks. Here's a recent and incredibly sad example of how improper food handling can be deadly. This case of botulism happened at a commercial gas station - imagine what might occur in your very own kitchen.
I'll get off my soap box now. This is a topic I have strong feelings about :-)
