Dessert Table or Table Service?

Hello!

I'm trying to decide whether it's better to have a dessert table displaying our assorted desserts and cake options, or to have the venue serve dessert family-style at the end of the plated meal. My venue has a designated area where they can set up a dessert table and coffee station, but they also offer table service for the in-house catered desserts.

Here are the options I'm considering:

1. Dessert Table

End the plated meal service after the main course and allow guests to serve themselves dessert from the dessert table in their own time. (Does this lead to long lines/bottlenecks? Should I serve coffee tableside right after dinner regardless instead of having a coffee station?)

2. Tableside Service

Serve the chef's assorted bite-size desserts after the plated meal along with coffee, as per normal meal service. If I were to go with this option, we'd have only our cake on display and offer it as a late-night snack at the end of the night.

As a guest, would you prefer to have dessert and coffee served at the table right after the meal, or would you rather have a break between dinner and dessert to dance, mingle, etc? I'm worried not serving dessert or coffee right away might lead to an abrupt end to the meal, but I also like the idea of having a nicely displayed table with desserts and cake.

Any insight is much appreciated!

    I'd rather have a break between the meal and dessert/coffee. I think if you have coffee drinkers though, they'll have some regardless of when it's served and eat dessert with it. For my wedding, the cake will be plated and served and the dessert table will be open as a buffet.

    If you do have a coffee station, I suggest multiple cambros of coffee and at least one of hot water so multiple people can serve themselves at a time.

    My sister had a self serve cupcake table at her wedding of 200 and there were no lines.

    I would have a dessert table. Honestly, people are usually pretty full after drinks, cocktail hour and entrees. I was just at a wedding where they had family style desserts and they were barely touched. If people see the dessert table, they will probably be more inclined to go grab a bite in between dancing.

    I would either do dessert table or, if you want to do table service, I've more traditionally seen the cake and coffee served by wait staff and then a table of other desserts for people to go and pick up other things. I would do that rather than the cake sat on its own while the other desserts are served tableside. However, I've never had dessert served immediately after the meal at a wedding. Typically there is a gap to allow people to digest.

    Even pre-pandemic we’ve never seen people touch family style desserts. A dessert table gets cleaned out pretty quickly without traffic jams. If you don’t plan to serve cake soon after dinner, it won’t get touched at all. You are better off skipping it if you don’t plan to have it available with the other desserts. Most guests won’t hang out waiting till the end of the reception for cake. Older generations see the cake cutting as the cue they can head out because all other festivities are over and they won’t enjoy staying until the end to get cake.
