I just got engaged and I'm finally getting my wedding... except both my parents and all of my grandparents are deceased. I have some ideas of how to honor them... but there are other moments I have no idea what to do. Daddy/Daughter dance? Who is going to walk me down the aisle? I just don't know. My only siblings is my sister who will be my matron of honor.

Your sister could walk you down the aisle and say she is honoring your parents in what would be their desire to give Sarah away in marriage. Don't make it any more detailed than that declaration. The officiant might have to tailor the wording to make it ready for your sister to share that representation for your parents.
