Chicken Options

For our dinner we are doing a buffet with 2 entrees and 3 sides. I'd love input on which chicken option to use.


Currently we have:

Sausages & Peppers which pair nicely with the Rigatoni & Marinara.

A CHICKEN with Red Skin Garlic Potatoes and Parmesan Green Beans.



Our chicken options are:

Grilled - was flavorful but a bit dry

Marsala - flavorful

Champagne - flavorful


My concern is that the Marsala & Champagne both had mushrooms and while I love them, I know a lot of people are picky eaters.. Is this a problem? Is there one that is less ~controversial~. We have limited options, so trying to please people here since I'm really NOT a picky eater.

    I'd go with either marsala or the champaign. If they don't like the mushrooms they can pick them out. It's not like the mushrooms will be finally chopped.

    I agree with PP. If someone does not like mushrooms, they can take them off. Pick whatever you liked best.

    Grilled chicken for a buffet is almost guaranteed to be dry. It's impossible to make large quantities and keep it hot without getting dry. I'd go with one of the other options. My vote would be for champagne!

    Agreed with the others - I don't like mushrooms, but don't mind eating around them and definitely better than dry chicken! Go with whichever you liked best!

    Definitely not the Marsala. I love mushrooms but you’d be surprised how many people do not. Never heard of Champagne chicken but if it was yummy and there were no funky ingredients, go for it.

    I had to get a count (between beef peppercorn or chicken Marsala). Surprisingly, it was half & half between the 2.

    I would say the marsala or champagne. My FH is a very picky eater who does not enjoy mushrooms, but he does like chicken marsala and just picks out the big chunks of mushrooms. Grilled chicken might be okay, but I feel like it'll be a little dry.

    Chicken is very difficult to cook completely in banquet quantities so some parts will be undercooked which is not safe. Or it will be overcooked to compensate. What sauces do they offer for the grilled chicken? That will be your bigger crowdpleaser oprion. Avoid both mushroom options.
