Change the date photoshoot

I would fear that doing a just-for-fun photo shoot in the middle of a pandemic would come off as a little tone deaf.

Yes, I think it's fine to approach scheduling changes in a light-hearted manner, but do try to avoid making light of the actual pandemic that is causing so much pain, grief, and stress in people's lives. It's very likely that at least someone on your guest list has lost or will lose someone before this is over. Just like you wouldn't make fun of cancer in a save the date photo, don't make fun of this virus.
