Champagne?

We'll be having wine and beer as our only alcoholic drinks. It's at a winery, but they do allow you to bring some things in, like the beer and if we wanted to do a nice champagne. We aren't planning on doing a champagne toast, just whatever's in your glass for a toast. My question is: how many people do you think actually opt to drink champagne over wine/beer? The winery has a sparkling wine option we could offer, but I'm wondering if I should splurge for more expensive champagne instead or if that would be a waste/not necessary.
