Catering Panic - Resolution

Samantha, on August 14, 2019 at 7:11 AM Posted in Wedding Reception 0 6
8 days until my wedding and my catering conundrum has reached a resolution! My FH pointed out that he’d feel embarrassed for spending so much money on catering because it’s not how his family does things. And then I realized our wedding contains none of my family except my parents and just a couple of my friends so irrelevant to how I feel, (6 peeps of mine to his 20) we are catering to his family and that’s what matters and I don’t want to make them uncomfortable.

So I’m going to email our original caterer and cancel everything - he still hasn’t sent me quotes for added hours or deposit information or updated invoice so maybe it’s for the best. We opted to order (and did) order some local BBQ that’ll be dropped off. I checked with our rentals companies and since no ice chests are available and chafing dishes are too expensive. It’ll be coming as is hopefully on time and if it gets cold .. we will have to deal. I convinced FH that asking guests to bartend was out of the question. He agreed to my one term, and we’ll pick up some drinks and borrow an ice chest or two and fill containers with pre mixed beverages and guests will self serve. For apps, I guess trays of Costco veggies and chips will suffice and ice cream cones or something.

He’s happier, much happier which is better for everyone at the end of the day. But now I get to scramble with this new DIY catering plan and still have a conversation with the original caterer. I’ll have skip morning with my girls wedding day of to set everything up because it’s not in my contract for the DOC around also do a catering spread. Oh and find time somewhere to pick up food, make it look halfway presentable.

This is has been a nightmare and I thank all you kind ladies for allowing me to vent my frustrations and provide me with advice which I’ve been using to find solutions. And hey... now we get to plan a honeymoon sooner because he’s more relieved we aren’t wasting unnecessary money on catering for only 30 people who won’t care.

One thing to note: food safety is an issue if you are not keeping your hot food hot. There are cheaper sources for chafing dishes: you can rent them, you can buy metal tins from a party store (with chafing dish holders), you can use a crock pot...but you risk getting your guests sick if food isn't held at temperature. (I work in food service).

Go to Costco and buy some chafing dishes. It’s not just food getting cold you have to worry about, there’s a reason that restaurants don’t serve you food that has been out without temperature control.

I was a chef for 10 years, I know all about food handling and am aware this would be a huge no no in the food service industry. I’m setting it up to have them drop off just before dinner starts and they have it kept at temperature the drive down in warming trays. They said it’ll be hot and fresh when they drop off and I’ll just have to move it inside or hold off a separate cooler to move the food after we’re done eating.

I'm glad you guys were able to cone to an agreement. It seems like you are taking a lot of this on for yourself to do though, so I wonder if FH can help with the logistics some? It takes guys way less time to get ready. Instead of you having to do all the running around to acquire items and then have to set it all up by yourself, is it possible for you and FH to divide duties. Maybe you rin to Costco the day before and he sets it up with his mom the morning/afternoon of because his family knows what to do and they are the experts? Or maybe his other close family or friends? Also, maybe FH can call the original caterer to cancel? If not, no biggie, I just thought it may be a lot for you to take on.

This made me laugh, thank you. He did offer to cancel but since I’ve been working with the caterer I’d rather do it. And it is a big ask but I’m staying much closer to the venue than him the night before (2 min compared to 35 min) so it’ll be easier for the food stuffs to be where I’m at and for me to take it over. His sister is already doing our photos because he didn’t want a photographer and he isn’t sure when the other sibilants will be coming into town, maybe right before the wedding. He’s also not close with his step mom Smiley sad

I’m glad it’s working out for you guys! Do you have ANY room in the budget for chafing dishes? You can get a box of disposable ones from Walmart for $30 It’ll keep your food safe to eat for everyone

I know it’s stressful hun, I’m not getting a day to be pampered or anything either. Smiley sad I’m decorating my venue right before the wedding because they don’t allow decorations to be put up early. It’ll be ok! You can still make the food look beautiful. You can get nice looking serving trays from thrift stores for your appetizers too, mine were $3 and it makes a world of difference!
