Caterer tasting

I reached out to a caterer that I had been looking at and who was suggested by my venue about their availability. They told me they were available and invited me for a free private tasting which we scheduled for later this month; however they never asked any details about the food we want (they have a variety of premade menues but also offer custom). We are pretty set on what we want food wise, and specifically my fiance is wary of their ability to make authentic tacos. What should I expect from the tasting and should I ask for one after we sign a contract with our specific choices? Or should I let them know right now that we have a specific concern?

    Send a follow up email letting them know what types of foods you want at your wedding so they can prepare samples for the tasting. Don't sign a contract until after the tasting.

    Never ever book any caterer without getting a tasting first. Otherwise you will be locked into something you can't get out of.

    Alert them immediately about your concerns and requests. If they still do not respond, look elsewhere asap.

    I would reach out to them to let them know that you have a specific menu in mind and see what they have to say. Worst case they might not be able to offer what you are looking for and in that case then you continue to research caterers that you and your fiancé are happy with.

    If it’s a regular thing they have for prospective clients and you haven’t booked them yet, they probably have a variety that they offer and don’t customize it for one couple, there are likely going to several couples.

    My caterer customized our menu and tasting before we signed with them, I would reach out to them and tell them you want to try specific items at your tasting and see what they can do. They might not be able to do that level of customization for your tasting, but I would at least expect to get a good idea of whether they’ll be able to make your menu the way you want it.

    I would recommend telling them what food you have in mind before the tasting so they can prepare it for you as it would be served. There's no point tasting food that is wildly different from what you plan to serve. Our caterer sent us their full menu to look at in advance and prepared the food we highlighted for the tasting. Since you said it's a private tasting it should be catered specifically to your requests.
