I’ve been to weddings where this is done, my one piece of advice is to choose delicious candies over color-coordinated candies. It’s a bummer when the candy table looks grammable, but is actually full of candies no one really likes like only peach jelly beans.

We are doing a candy bar as well, in place of favors. FH said favors were silly, that no one does them (🤦‍♀️Oh lawdy)... So we compromised. I suggested a candy bar, and he in turn gets to keep all the candy that is left over, which he seemed to really like the idea of.
Im not a wedding expert, but from I think and what others have said, yes its totally acceptable to do instead of favors.
As for candy recommendations? I saw one post where a couple was doing classic or vintage candy and wanted know everyone's favorite childhood candies, so, that's mostly what were doing too. We will have pop rocks, rock candy, candy corn (since its October & all), werthers originals, etc.
But, I warn you, depending on your guest size this can easily add up to over $100.
Also, I agree with Rebecca, don't go for the color coordinated candy, try just going for candy you know people like.

I did one. I recommend going to after holiday sales for candy and dollar tree. Sometimes Amazon and places like smart and final have good deals too

For my wedding and I had a candy bar and the guests loved it. I had a company (Bourne To Create) design mine for $400 and it fed 80 guests. You can definitely use the candy bar as favors, just make sure you have baggies and enough candy for everyone. I also recommend using candy colors that match your color scheme and adding a personal touch such as letters that spell out your new last name name and/or a way for a guest to win a large container of candy. At my wedding the guest who had the closest guess for the kisses took home the entire container. Here is my candy bar...

Most people don't take the favors unless they're edible so a candy bar is a great way to go. We had a candy bar, but as another PP said, it adds up. I think we spent around $300 for 40 guests. I already had the containers and scoops so just had to buy the candy and bags. You can get really cute custom paper candy bags on Etsy for little cost. I wanted a more upgraded bag so got linen bags on Etsy that fit my Christmas theme. It doesn't matter so much if you color coordinate your candy with your wedding colors as long as you choose good candy, especially name brand candy (M&Ms and not generic chocolate pieces). Oriental Trading is a great place to start to give you ideas but then shop around. I got all my candy from both Oriental Trading and Amazon. You will also want to get a variety of gummy, hard, and chocolate candies. Since we had a Christmas wedding, we went with red, white, and red/white candies and had 11 different varieties.

We are doing one and decided on M&Ms, Skittles, Hershey kisses, and popcorn. We also recently went to a friend's wedding and they had one with M&Ms, Skittles, swedish fish, sour patch kids, starburst, etc. I think it's a great idea and, though it can be pricey if you're not careful, will be better than wasting money on favors that get left behind or thrown away.

My cousin did a candy bar and made it match her theme using barrels and things like that to put them ontop of. It was nice Smiley smile

I agree! Some candy (for example, the coloured pearl balls) tastes horrible and no one actually enjoys it. Do thigns like sour peaches, swedish berries, licorice, etc
